Sweet And Sour Green Beans
Ingredients
- 1 small onion, thinly sliced
- 12 oz fresh green beans, cut in half
- 4 slices thick-cut bacon
- 8 oz fresh presliced baby portabellas
- 2 tablespoons apple cider vinegar
- 1 tablespoon sugar
- 3/4 teaspoon kosher salt
- 1/2 teaspoon pepper
Steps
- Slice onion. Cut beans in half horizontally.
- Chop bacon into 1-inch pieces (wash hands).
- Preheat large, nonstick sauté pan on medium-high 2-3 minutes.
- Place bacon in pan; cook and stir 6-8 minutes or until browned. Remove bacon from pan; reserve 3 tablespoons bacon fat in pan.
- Add beans to bacon fat; cook and stir 5 minutes. Stir in onions and mushrooms; cook and stir 5 minutes.
- Stir in vinegar, sugar, salt, and pepper; cook and stir 1 minute or until sugar dissolves. Stir bacon into bean mixture. Serve. (Makes 6 servings.)
